Crockpot Corn Soup Recipe
I can’t even say I grew up eating corn soup, cause i didn’t. Mamo didn’t do the vegetarian thing and I’ve inherited my mom’s limited menu!
Corn soup is what is sold by vendors in Trinidad and island fetes after the dance, so probably I bruk out on corn soup???? Anyway, i finally mastered it in the crockpot, and damn it’s so easy!
#4 absolutely loves soup, and when her Dad was going away (not jail, just a vacay) I knew I had to step up my game and try and make it for her.
She actually loved it, and even had a soup dance that I will spare you from watching!
Hardware needed: Large crock pot and blender
Software: corn and other shit
What if recipes were written like those tech lesson plans??? Ok, I’m back.
Ingredients
1 large ass scotch bonnet pepper (leave it whole, or else… trust me!)
1 handful of chive
1 cup yellow split peas (soaked would be super nice, but actually not necessary)
1 handful of cilantro or culantro or shadobeni
1 can coconut milk (full fat)
2 potatoes quartered (ya’ll know I don’t be peeling no darn potatoes)
2 table spoons coconut or olive oil
2 onions chopped
3 corns, cut into manageable pieces
3 large carrots, cut into coin shapes
4 garlics clopped
5 pinches of pink himalayan salt
6 pepper balls (pimento?)
7 sprigs of thyme
8 cups organic veggie broth (2 boxes)
Put all except for that big ass pepper in the crockpot and mix it up. Then place the pepper on top (I like to pretend it’s a cherry on my pineapple cake) and cover it for 5-6 hours on high. An hour before you are serving it, take nearly all of the liquid out and put it in the blender. Return to pot and go about your business for the next hour, and put it on low or warm.

I sure did sneak some yellow lentils (split peas) in there! They wouldn’t eat them otherwise.
